I wanted to share a really good cobbler recipe for you guys! I have made it using peaches and apples and both times it was delicious.
I used canned fruit both times. Once with regular sliced peaches, and then another time using the canned apple pie filling.
David and I have this “thing” whenever I try a new recipe. After we eat it, I’ll ask “Is this a keeper?” Sometimes the answer is yes and sometimes it is no. I’m trying to fill my book up with staple recipes I’ll go to whenever I plan on making a certain dish. “Hey Debbie can you bring a dish to the party? Maybe a cobbler or something?” “Well of course I can”, I’ll reply. And then…see? I have my recipe – tried and true just waiting on me. Plus, I can start cleaning out my book. I mean, who needs 10 different recipes for cobbler?
Anyway – here it is.
1 box yellow cake mix
1/3 cup butter (room temp)
2 large eggs
29 oz can fruit(your choice)
8 oz cream cheese
1/3 cup sugar
1 tsp vanilla extract
Mix together: cake batter, butter, and ONE egg with fork until crumbly. **important** – reserve 1/2 cup of this for the topping.
Spray 9X13 baking dish with cooking spray.
Press this mixture into the dish to cover the entire bottom.
Bake for 10 minutes at 350
Meanwhile, cut up any canned fruit you are using into bite sized pieces.
After crust is ready, layer the cut up fruit over the top.
In a separate bowl, beat together cream cheese, sugar, ONE egg, and vanilla. Beat with electric mixter until creamy.
Layer this on top of peaches.
Sprinkle top with reserved cake crumb mix.
Bake for 30 minutes at 350. Then allow to cool for 30 minutes.

*Disclaimer#2 – sorry about the droopy ice cream, but we are in NC and it is still quite hot and humid outside. But it DOES make you want to sink a spoon in it’s droopy goodness, doesn’t it?
