Butter Pecan Peach Mango Cupcakes

I did some baking therapy this weekend. You know what that is, right? It’s those times when you just need to mess up your kitchen and get your hands dirty, and then step back and smile at whatever fabulous creation, or epic fail, you just finished making.

What I made was successful, so I’m sharing it here on my blog.

I’m a simple baker. I’m not going to make my cake mix from scratch when I can buy it in a box. The only thing I don’t cut corners on, is my icing. I have never tasted an instant icing that is better than homemade.

The ingredients are simple. Butter pecan cake mix, powered sugar, preserves, milk, vanilla, eggs, oil, and water.

( I just noticed that “box top” on the cake box that I didn’t cut out for the kid’s school. Oh well…)

Anyway – just mix up the cake as the directions tell you to, and make cupcakes. I found these adorable baking cups(at Walmart) to use.

They’re stiff and you fill them and just place them on a cookie sheet. No need to worry about a cupcake pan!

After your cupcakes are baked and cool, punch out the center. I use a tool to do this, but if you don’t have one, you could easily use a small  kitchen knife to carve it out. However, the little tools are fun and inexpensive. You can find them in most all cake sections of major dept. stores.

After the middle is cut out of the cupcakes, all you need to do is fill the center with Peach-Mango Preserves. A small spoon will work better. I found a baby spoon in the back of my utensil drawer and it made me cry. In my head.

Now it’s time for the icing. I played around with the amount of ingredients and found a combination that works well and remains stiff, even after adding the preserves to the icing mixture.

3 1/2 cups powered sugar.
1/3 cup softened salted butter.
1/2 tsp vanilla.
4 tbsp milk
2 tbsp peach mango preserves.

Mix this with a electric mixer on low for about a minute, and then on medium, or medium high  for a few minutes, to really whip it together. This will blend up the preserves so you don’t have a lot of large chunks.

Then ice em’!
